Indulge in a flavorful and healthy turkey wild rice salad.
Ingredients:
  • 100g packet wild rice
  • 200g snow peas, trimmed, thinly sliced
  • 1 bunch asparagus, trimmed, thinly sliced
  • 4 (about 125g each) turkey breast steaks
  • 42.00 gm lemon juice
  • 13.80 gm extra virgin olive oil
  • 3.60 gm honey
  • 1 small bunch watercress, washed, leaves picked
  • 40.00 ml chopped fresh chives
  • 70g dried blueberries
  • Lemon zest, to serve
Instructions:
  • Prepare wild rice in a large saucepan of boiling water as per package instructions. Drain thoroughly and allow it to cool.
  • Cook snow peas and asparagus in boiling water for 2 minutes until tender crisp. Refresh in cold water, then drain well.
  • Tenderize turkey breasts using a rolling pin or meat mallet. Heat a large non-stick frying pan over medium-high heat, then spray with olive oil. Cook turkey for 3-4 minutes on each side until golden and fully cooked. Slice before serving.
  • In a small bowl, combine lemon juice, oil, and honey by whisking. Set aside. In a large bowl, mix cooked rice, snow peas, asparagus, watercress, chives, and blueberries gently to combine. Enjoy!
  • Divide the salad among plates. Add turkey on top, then drizzle dressing and sprinkle lemon zest.
