Turkey rice-paper rolls

Elevate your Christmas turkey leftovers with this delicious encore dish.
Ingredients:
  • 50g rice vermicelli noodles
  • 50g snow peas, thinly sliced lengthways
  • 16 square (20cm) rice-paper sheets
  • 250.00 ml finely shredded roasted turkey
  • 1 carrot, peeled, cut into matchsticks
  • 40.00 ml coarsely chopped toasted peanuts
  • 16 fresh mint leaves
  • Sweet chilli sauce, to serve
Instructions:
  • Separately place the noodles and snow peas in heatproof bowls and cover with boiling water. Let the snow peas sit for 1 minute, then refresh under cold running water. Allow the noodles to sit for 5 minutes or until tender, then drain well.
  • Submerge 1 rice-paper sheet in warm water for 30 seconds until soft, making sure not to over-soak it to prevent tearing. Pat dry with paper towel. Lay flat on a clean surface. Fill the center with a portion of turkey, noodles, snow peas, carrot, peanuts, and a mint leaf. Fold ends and tightly roll up to seal the filling inside. Repeat to create a total of 16 rice-paper rolls. Arrange on a platter and serve with sweet chilli sauce.
