Turkey Basil Rolls

20-minute Thanksgiving: Thai inspired turkey rolls with coleslaw, basil, wrapped in rice paper - light, delicious, and festive.
Ingredients:
  • 3/4 lb ground turkey breast
  • 1/2 teaspoon salt-free Thai seasoning blend
  • 1/4 teaspoon freshly ground pepper
  • 1/8 teaspoon salt
  • 3/4 cup coleslaw mix (from 16-oz bag)
  • 6 round sheets rice paper (8 inch)
  • 12 large basil leaves
  • 6 tablespoons light sesame-ginger dressing
Instructions:
  • Preheat a 12-inch nonstick skillet over medium-high heat. Cook the turkey with seasoning blend, pepper, and salt for 5 minutes, stirring occasionally, until the turkey is cooked through. Transfer the turkey to a medium bowl and mix with coleslaw.
  • In a large shallow dish, pour hot water to cover the bottom. Submerge a sheet of rice paper and let it soften for about 30 seconds. Transfer the sheet to a work surface. Arrange basil leaves on the top third of the sheet, then spoon 1/3 cup of turkey mixture onto the bottom third. Roll the sheet starting from the filled side, tucking in the sides. Press gently to seal the seam. Place the roll seam side down on a serving plate and cover to keep it moist.
  • Continue the process with the remaining rice paper sheets, fresh basil, and turkey mixture. Cut each roll in half diagonally and serve with the dressing for dipping.
