Turkey, brie and apricot sausage roll bites recipe

Christmas sausage roll bites with sweet and savory flavors that are irresistibly addictive.
Ingredients:
  • 9.20 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 500g turkey mince
  • 50g brie, chilled, finely chopped
  • 82.50 ml apricot jam
  • 250.00 ml fresh breadcrumbs
  • 82.50 ml finely chopped fresh thyme leaves
  • 3 sheets frozen butter puff pastry, partially thawed, halved
  • 1 egg, lightly beaten
  • 4.80 gm sea salt
  • 1/2 tsp cracked black pepper
Instructions:
  • In a large frying pan over medium-high heat, heat oil until shimmering. Add onion and cook, stirring, for 5 minutes until softened. Transfer the onion to a large bowl and allow it to cool down.
  • Combine the mince, creamy brie, sweet jam, crunchy breadcrumbs, and aromatic thyme in a bowl. Season generously with salt and pepper. Mix thoroughly until fully incorporated.
  • 1. Preheat the oven to 200C/180C fan-forced and line 2 large baking trays with baking paper. 2. Lay out one piece of pastry on a flat surface. Add ½ cup of turkey mixture along one long edge of the pastry. Roll up the pastry tightly to encase the filling, making sure to seal it securely. 3. Repeat the process with the remaining pastry pieces and turkey mixture to create a total of 6 rolls. Trim the ends for a clean finish.
  • Cut each roll into 7 pieces and arrange on trays. Brush with egg wash. Combine salt, pepper, and remaining thyme in a bowl, then sprinkle over the rolls. Chill in the refrigerator for 20 minutes.
  • Bake until beautifully golden and fully cooked, about 20 minutes. Serve and enjoy!
