Rice paper rolls with turkey (low fat)

Impress post-holiday guests with decadent turkey rice paper rolls.
Ingredients:
  • 200ml hoisin sauce
  • 60ml rice vinegar
  • 1 small red chilli, seeds removed, finely chopped
  • 300g cooked turkey (preferably dark leg meat)
  • 20 large rice paper wrappers
  • 1-2 Lebanese cucumbers, cut into 20 x 5cm-long matchsticks
  • 5 thin spring onions, cut into 5cm lengths
Instructions:
  • Combine hoisin sauce, rice vinegar, and chili in a small bowl. Shred the turkey meat and toss it with half of the hoisin mixture until coated.
  • Soak the rice paper wrappers individually in a bowl of hot water until softened. Remove and shake off excess water. Place on a damp, clean absorbent cloth. Add 1 tablespoon turkey meat at one end, then 2-3 cucumber sticks and some spring onion pieces on top. Fold in the sides and roll up to enclose. Cover with a damp tea towel and repeat for the remaining wrappers.
  • Drizzle the remaining hoisin sauce over the rolls for added flavor and enjoyment.
