Vibrant bell peppers and wild rice in a flavorful tarragon-infused chicken broth thickened with cornstarch make a delicious soup.
Ingredients:
  • 2 cups wild rice
  • 6 cups water
  • 4 cups chicken broth
  • 1 cup frozen corn kernels
  • 0.5 cup chopped green onions
  • 2 tablespoons red bell pepper, chopped
  • 2 tablespoons chopped green bell pepper
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried tarragon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
Instructions:
  • Cook the rice in 6 cups of water until it's tender and fully cooked in a medium saucepan.
  • Combine flavorful broth, tender cooked rice, sweet corn, fragrant green onions, and vibrant red and green bell peppers along with fresh parsley and tarragon in a large saucepan. Cook over medium heat until the mixture comes to a boil. Then, lower the heat and simmer for 5 minutes, allowing the corn to become tender.
  • Combine cornstarch and water in a small bowl. Stir into the soup and cook for 5 minutes until thickened. Serve hot, stirring occasionally.
