Calico Chicken and Potatoes Skillet

Delicious 30-minute meal using rotisserie chicken and pre-cooked potatoes for convenience and ease.
Ingredients:
  • 3 slices bacon, chopped
  • 1 small red bell pepper, chopped (1/2 cup)
  • 1 bag (1 lb 4 oz) refrigerated cooked diced potatoes with onions
  • 1 teaspoon seasoned salt
  • 2 cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
  • 2 medium green onions, chopped (2 tablespoons)
Instructions:
  • Cook the bacon in a 12-inch nonstick skillet over medium heat for 3 to 4 minutes, stirring occasionally, until crisp. Remove the bacon using a slotted spoon and let it drain on paper towels, while keeping the drippings in the skillet.
  • Combine bell peppers, potatoes, and seasoned salt into the flavorful drippings. Cover and cook over medium heat for 14 to 16 minutes, stirring occasionally, until the potatoes achieve a delicious golden brown color.
  • Add the chicken and gently stir. Cover the dish and allow it to cook for 2-3 minutes until the chicken is heated through. Sprinkle with cheese, bacon, and onions. Cover again and cook for 1-2 minutes until the cheese is melted.
