Wild rice and ham medley simmered in savory chicken broth with vegetables and a hint of sweet Vermouth.
Ingredients:
  • 1 cup uncooked wild rice
  • 1 onion, chopped
  • 0.25 cup all-purpose flour
  • 1 quart chicken broth
  • 2 large carrots, shredded
  • 3 cups cubed cooked ham
  • 0.5 cup milk
  • 2 tablespoons chopped fresh parsley
  • 0.25 cup sweet vermouth
Instructions:
  • Boil the rice in water in a medium saucepan for 30 minutes. Then, drain, rinse, and set aside.
  • In a large soup pot, melt butter over medium heat and cook onion until translucent. Add flour all at once to make a roux. Gradually whisk in the broth until slightly thickened. Add carrots, ham, milk, parsley, and reserved rice. Simmer over low heat for 15 minutes.
  • Add the vermouth and let it simmer for an additional 30 minutes. Serve.
