Indulgent, creamy vegetarian soup with a Northern twist.
Ingredients:
  • 0.25 cup minced onion
  • 0.5 cup diced celery
  • 2 tablespoons minced garlic
  • 1 cup all-purpose flour
  • 6 cups vegetable broth
  • 4 cups cooked wild rice
  • 1 cup grated carrot
  • 0.25 cup sliced almonds
  • 1 pinch red pepper flakes
  • 2 cups half-and-half
Instructions:
  • In a large pot over medium heat, warm up oil. Add garlic, onion, and celery, and sauté until the onion is soft and translucent, around 5 minutes. Sprinkle in the flour and cook for an additional 3 minutes. Add vegetable broth, bring to a boil, then reduce heat to medium-low. Simmer for 10 minutes, stirring often.
  • Add wild rice, carrots, almonds, and red pepper flakes to the pot. Simmer for about 5 minutes until the carrots are tender. Pour in half and half and heat until warmed. Season with salt and pepper to taste before serving.
