Hearty vegetarian/vegan soup - packed with flavor.
Ingredients:
  • 2 tablespoons olive oil
  • 1 red onion, coarsely chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 (14.5 ounce) can Italian-style diced tomatoes
  • 1.25 cups red lentils, rinsed and drained
  • 0.5 cup uncooked brown rice
  • 1 tablespoon Italian seasoning
  • 1 tablespoon dried celery flakes
  • 1 teaspoon ground white pepper
  • 1 teaspoon dried marjoram
  • 1.5 tablespoons balsamic vinegar
Instructions:
  • In a large pot, heat olive oil over medium heat. Sauté onion and garlic until softened, about 5 minutes. Add broth, diced tomatoes, red lentils, brown rice, Italian seasoning, celery flakes, white pepper, and marjoram. Bring to a boil, then cover and simmer until lentils break down and rice is tender, about 55 minutes.
  • Just before serving, swirl in the balsamic vinegar to elevate the flavors of the soup.
