Risoni risotto with Italian sausage and red wine and garlic sauce

Savory sausage risoni risotto in a flavorful red wine and garlic sauce - ideal for a quick and delicious weeknight dinner.
Ingredients:
  • 50ml extra virgin olive oil
  • 1 small brown onion, finely chopped
  • 4 Italian sausages, casings removed, crumbled
  • 350g Risoni
  • 80ml (1/3 cup) red wine
  • 1L (4 cups) chicken stock
  • 400g jar Red Wine & Garlic sauce
  • 7 thyme sprigs, leaves removed
  • 70g (1 cup) finely grated Parmigiano Reggiano cheese, plus extra, shaved, to serve
  • 25g unsalted butter, chopped
  • 1 small bunch parsley, leaves chopped
Instructions:
  • In a large frying pan over medium heat, heat the oil. Saute the onion until golden, about 2-3 minutes, stirring often. Add the sausage meat and cook until golden, about 3 minutes, stirring occasionally. Add the risoni, coat well. Pour in the wine and cook until evaporated. Reduce heat to medium-low.
  • Bring the stock to a boil in a saucepan over high heat, then lower the heat to low.
  • Pour in a generous ladle of stock into the risoni mixture and cook while stirring like you would when making risotto until the liquid is soaked up. Stir in the Barilla sauce and fresh thyme leaves. Keep adding stock until the pasta is tender and has absorbed all the liquid.
  • Take the risoni off the heat, and gently combine it with grated cheese, butter, and fresh parsley. Season to taste, then garnish with shaved parmesan on top.
