Bolognese rissoles

Quick and delicious bolognese rissoles with hidden risoni, packed with 3.5 servings of veggies, ready in just 45 minutes. One-pot convenience!
Ingredients:
  • 250.00 ml dried risoni
  • 500g lean beef mince
  • 1 brown onion, grated
  • 2 garlic cloves, crushed
  • 1 carrot, grated
  • 69.38 gm tomato paste
  • 125.00 ml chopped fresh basil leaves
  • 82.50 ml dried breadcrumbs
  • 1 egg, lightly beaten
  • 18.20 gm extra virgin olive oil
  • 400g bottle sugo with parmigiano reggiano
  • 2 x 90g crunchy side salad bowls
  • 62.50 ml balsamic and roasted garlic vinaigrette
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions. Then, drain and rinse under cold water.
  • In a large bowl, combine half of the pasta with mince, onion, garlic, carrot, tomato paste, basil, breadcrumbs, and egg. Season with salt and pepper, then mix with your hands until well combined. Shape the mixture into 12 patties and set aside. Heat oil in a large frying pan over medium heat. Cook the patties in batches for 4 to 5 minutes on each side until browned and cooked through. Transfer to a plate and keep warm. In the same pan, add pasta sauce and cook for 2 to 3 minutes until heated through. Season with salt and pepper to taste.
  • Toss the remaining pasta with the salad bowls and vinaigrette. Serve the rissoles with the sauce and salad.
