Bolognese meatballs recipe

Delicious bolognese meatballs - great for sandwiches, salads, or snacking!
Ingredients:
  • 62.50 ml risoni (see notes)
  • 18.20 gm extra virgin olive oil
  • 1 small brown onion, finely chopped
  • 1 garlic clove, crushed
  • 1 tsp dried oregano
  • 500g lean beef mince
  • 250.00 ml panko breadcrumbs
  • 62.50 ml finely grated parmesan
  • Salt-reduced tomato sauce, to serve
Instructions:
  • Boil pasta in a saucepan following package instructions. Drain and let cool.
  • Heat oil in a large frying pan over medium heat. Add onion, garlic, and oregano. Sauté for 5 minutes until softened. Transfer to a large bowl and allow it to cool slightly.
  • Preheat your oven to 200°C/180°C fan-forced. Line a large baking tray with parchment paper. Combine pasta, mince, breadcrumbs, tomato paste, parmesan, salt, and pepper with the onion mixture. Mix well by hand until fully combined. With damp hands, shape level tablespoons of the mixture into balls and arrange them on the tray.
  • Bake the meatballs for 12 minutes or until cooked through. Enjoy them with tomato sauce, or freeze for later use. (Refer to notes for more details).
