Quick and easy Italian meatball soup with star-shaped pasta - a flavorful family favorite with veggies and tomatoes.
Ingredients:
  • 3 cups water
  • 2 (14 ounce) cans diced tomatoes with onion and garlic, undrained
  • 2 (14 ounce) cans beef broth
  • 1 teaspoon Italian seasoning
  • 1 (16 ounce) package frozen cooked Italian-style meatballs
  • 2 cups frozen Italian-blend vegetables
  • 1 cup small star-shaped dried pasta
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Combine water, tomatoes, beef broth, and Italian seasoning in a large pot and bring to a boil.
  • Combine the meatballs, Italian-blend vegetables, and pasta in the pot. Bring to a boil, then simmer on medium-low heat until the meatballs are heated through and the pasta is tender, approximately 10 minutes.
  • Serve the soup in bowls and top it off with fresh Parmesan cheese.
