Creamy chicken with lemon and garlic recipe

Lemon garlic chicken served with a refreshing seasonal salad - a delectable dish for any meal.
Ingredients:
  • 40.00 ml plain flour
  • 2 Australian Chicken Breast Fillets, halved horizontally
  • 18.20 gm olive oil
  • 40g butter
  • 1 lemon, thinly sliced
  • 1 brown onion, thinly sliced
  • 2 garlic cloves, crushed
  • 20.00 ml drained baby capers
  • 60ml lemon juice
  • 125ml chicken stock
  • 60ml cream
  • 40.00 ml finely chopped chives
  • 40.00 ml finely shredded flat-leaf parsley
  • 300g baby white potatoes
  • 200g green beans, trimmed
Instructions:
  • Spread the flour on a large plate and coat the chicken by pressing it into the flour.
  • In a large frying pan over medium-high heat, melt the oil and half of the butter until sizzling. Add the chicken and sear for 2-3 minutes on each side until golden brown and perfectly cooked. Remove the chicken from the pan and set it aside on a plate.
  • Add the rest of the butter to the pan, then place lemon slices in the pan and cook for 1 minute on each side until they caramelize. Transfer the lemon slices to a plate.
  • Lower the heat to medium and toss in the onion, garlic, and capers. Saute for 5 minutes until the onion becomes tender. Pour in the lemon juice and let it simmer for 1 minute until slightly reduced. Stir in the stock and cream, and bring to a boil.
  • Add the chicken and lemon slices back to the pan. Simmer until the sauce thickens (2-3 mins). Season to taste, then remove from heat and sprinkle with chives and parsley.
  • Simmer potatoes in boiling water until just tender, about 15 minutes. Add beans for the final 3 minutes of cooking. Drain.
  • Spread the chicken mixture onto each serving plate, then generously drizzle with the delicious pan juices. Enjoy alongside the flavorful potato mixture.
