Lemony potato bake recipe

Enhance your potato bake with zesty lemon and fresh lemon thyme for a tangy and creamy delight.
Ingredients:
  • 10.00 gm softened butter, for greasing
  • 2 cloves garlic, crushed
  • Grated rind of 2 lemons
  • Juice of 1 lemon
  • 1 tsp lemon thyme leaves
  • 125ml (1/2 cup) Chicken Style Liquid Stock
  • 400ml tub sour cream
  • 125ml (1/2 cup) thickened cream
  • 1kg white potatoes, peeled, thinly sliced
  • 225g (1 1/2 cups) grated cheese blend
Instructions:
  • Preheat your oven to 190°C (170°C fan forced) and generously grease a 2.5L (10-cup) ovenproof baking dish with butter.
  • In a bowl, mix together garlic, lemon zest and juice, fresh thyme, vegetable stock, sour cream, and heavy cream.
  • Layer half of the potato slices on the bottom of the dish. Sprinkle with 1/2 cup of cheese and season with salt and pepper. Pour half of the cream mixture over the potatoes. Add the remaining potato slices, salt, pepper, and cream mixture in layers. Keep the remaining cheese aside for later use.
  • Cover the dish with foil, place it on a baking tray, and bake in the oven for 75 minutes or until the potato is tender. Sprinkle reserved cheese over the top and bake, uncovered, for an additional 30-35 minutes until golden brown and the potato is very tender.
  • Allow to cool for 15 minutes before serving.
