Aussie-inspired bush potato salad for a festive Christmas celebration.
Ingredients:
  • 2kg kipfler potatoes, scrubbed
  • 6 garlic cloves, unpeeled
  • 56.88 gm olive oil
  • 11.80 gm wholegrain mustard
  • 62.50 ml chopped fresh chives
Instructions:
  • Preheat your oven to 180C/160C fan-forced and lightly grease a large baking tray.
  • Toss potatoes and garlic with 2 tablespoons of oil on a baking tray. Roast for 20 minutes until garlic is soft. Take out the garlic. Continue roasting potatoes for another 20-25 minutes until they are tender.
  • Peel garlic and squeeze it into a small bowl, discard the skin. Mix in lemon juice, mustard, and the rest of the oil. Slice warm potatoes thickly and place in a large bowl. Add chives and the garlic mixture, toss gently to combine, then serve.
