Warm Chicken Ranch Wraps

Portable chicken wraps bursting with grilled chicken, fresh veggies, rice pilaf, and creamy ranch dressing in a cozy tortilla.
Ingredients:
  • 8 skinless, boneless chicken breasts
  • 1 cup water
  • 1 cup cooked rice
  • 0.5 cup ranch-style salad dressing
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 0.25 teaspoon ground black pepper
  • 1 cup vegetable oil
  • 8 (10 inch) flour tortillas
  • 2 cups shredded lettuce
  • 2 tomatoes, chopped
Instructions:
  • Slice the chicken breast into strips.
  • Prepare delicious grilled chicken: Coat a large skillet with nonstick cooking spray. Sear chicken over medium-high heat for 12-15 minutes until golden and juices run clear. Pour water into the skillet and bring to a boil. Stir in rice, cover, and let sit off the heat for 5 minutes. Finally, mix in the salad dressing. Enjoy your tasty meal!
  • Coat chicken in buttermilk, then dredge in flour mixture. Fry each side for 3 minutes in a skillet with 1 cup of oil at 350°F (175°C). Toss fried chicken with cooked rice pilaf and mix in salad dressing.
  • Place a warm tortilla on a flat surface and layer with lettuce, chicken and rice mixture, and tomatoes. Fold in the sides of the tortilla, then tightly roll from bottom to top, ensuring ingredients are packed snugly. Slice each wrap diagonally and serve.
