Buffalo Chicken and Ranch Wraps

Spicy buffalo chicken bites with bacon, tomato, and ranch dressing, wrapped in warm tortillas.
Ingredients:
  • 1 pound thin-sliced bacon
  • 2 tablespoons bacon drippings
  • 3 pounds skinless, boneless chicken breast halves, cut into bite size pieces
  • 0.25 cup Buffalo wing sauce
  • 2 tablespoons butter, melted
  • 12 (10 inch) flour tortillas
  • 1 cup diced fresh tomato
  • 0.75 cup ranch dressing, divided
Instructions:
  • In a large skillet, sizzle the bacon over medium-high heat, flipping occasionally, until perfectly crispy and golden brown, for about 10 to 15 minutes. Let the bacon rest on a paper towel-covered plate to drain excess oil and then crumble once cooled.
  • Keep 2 tablespoons of bacon drippings in the skillet, then cook and stir chicken chunks until browned, about 10 minutes. Cover and cook until no longer pink inside and juices run clear, about 10 more minutes. Mix in Buffalo sauce and melted butter until chicken is coated, then add crumbled bacon. Keep warm.
  • Warm the tortillas individually in a large ungreased skillet over medium heat until they slightly bubble and develop small brown spots. Fill each tortilla with about 1/3 cup of the chicken filling, a tablespoon of tomatoes, and sprinkle 1 tablespoon of ranch dressing over the tomatoes. Roll them up and serve warm.
