Buffalo chicken and rice wrap with melty cheese, served with veggies and ranch.
Ingredients:
  • 1 (8.8 ounce) pouch UNCLE BEN'S® Ready Rice® Whole Grain Brown
  • 2 tablespoons water, or as needed
  • 1 cup shredded cooked chicken breast
  • 0.25 cup Buffalo-style hot pepper sauce (such as Frank's® Red Hot®)
  • 4 (8 inch) whole-wheat tortillas
  • 0.5 cup shredded Cheddar cheese
  • 0.5 cup shredded lettuce
  • 1 cup baby carrots
  • 1 cup celery sticks
  • 1 cup reduced fat ranch dressing
Instructions:
  • Break apart the rice pouch by gently squeezing the sides. Transfer the rice and water from the pouch into a skillet over medium heat. Stir and cook until the rice is heated through and the water is absorbed, typically taking about 2 minutes. Then, set it aside.
  • Mix shredded chicken with tangy buffalo sauce until fully coated; let the flavors marry while you prepare the rest of the dish.
  • Lay a tortilla on a microwave-safe plate, cover it with a damp paper towel, and heat on high for 20 to 30 seconds until warm and pliable. Repeat with the rest of the tortillas.
  • Divide the rice evenly on the tortillas, leaving a 1/2-inch border. Spread the chicken mixture evenly over the rice. Top with cheese and lettuce. Fold in the sides and roll up tightly. Cut each wrap in half diagonally before serving.
  • Present each succulent wrap alongside fresh, crunchy carrots, and crisp celery, accompanied by approximately 1/4 cup of zesty ranch dressing for a delightful dipping experience.
