Elevate your summer salad with a touch of vibrant Thai seasoning.
Ingredients:
  • 10.00 gm water
  • 500g chicken tenderloins
  • 18.40 gm vegetable oil
  • 20.00 gm Thai seasoning
  • 80g mayonnaise
  • 21.00 gm lime juice
  • 1 1/2 tsp grated lime rind
  • 100g mixed salad leaves
  • 2 mangoes, peeled & sliced
  • 1 red onion, sliced
  • 125.00 ml coriander
Instructions:
  • Brush the chicken with oil on both sides. Sprinkle Thai seasoning on non-stick baking paper and press gently to coat the chicken evenly.
  • Barbecue or grill the tenderloins for a brief 2-3 minutes per side, or until fully cooked. Then, set them aside.
  • Mix water and lemon juice, then slowly incorporate them into S&W Whole Egg Mayonnaise using a spoon in a bowl. Add lime rind and stir.
  • Layer a bed of crisp salad leaves, ripe mango slices, sliced onion, and fresh coriander on a serving platter. Gently place the succulent chicken on top of the vibrant salad arrangement. Finish by generously drizzling the dressing over the dish.
