"Quick and affordable healthy chicken salad perfect for any day of the week, from busy weekdays to weekend gatherings."
Ingredients:
  • 110.00 gm pearl barley, rinsed, drained
  • 2.50 gm smoked paprika
  • 36.40 gm extra virgin olive oil
  • 4 x 150g chicken breast fillets
  • 100g mixed salad leaves
  • 1 continental cucumber, diced
  • 1 long red chilli, thinly sliced
  • 40.00 ml apple cider vinegar
  • 5.90 gm wholegrain mustard
  • 40.00 ml pistachio kernels, toasted
  • 1 large mango, thinly sliced
Instructions:
  • In a medium saucepan, simmer barley in boiling water for 40 minutes or until tender. Drain and rinse under cold water.
  • In a bowl, mix paprika, garlic, and half of the oil. Add chicken and toss well to coat. Preheat a barbecue grill or chargrill pan over medium heat. Grill chicken for 5 to 6 minutes on each side until fully cooked. Place chicken on a plate, cover to keep warm, rest for 5 minutes, then slice and serve.
  • In a large serving dish, arrange salad leaves, cucumber, chilli, and onion. Mix vinegar, mustard, and most of the oil in a small jug. Season with salt and pepper. Add barley and three-quarters of the dressing to the salad. Gently toss to combine. Sprinkle with pistachios. Top with mango and chicken. Drizzle with the rest of the dressing. Serve and enjoy!
