Creamy mango coconut chicken curry: A fragrant blend of fresh mango and full-fat coconut milk creates a sweet and savory dish bursting with flavor.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped (1 1/2 to 2 cups)
  • 1/2 red bell pepper, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons fresh minced ginger
  • 2 tablespoons yellow curry powder
  • 1/2 teaspoon ground cumin
  • 2 mangos, peeled and diced
  • 2 tablespoons apple cider vinegar or white vinegar
  • 1  13.5-ounce can (full-fat) coconut milk
  • 1 1/4 pound skinless boneless chicken thighs or breasts, cut into 1-inch pieces
  • 1/3 cup golden raisins (optional)
  • Salt and pepper
  • Cilantro for garnish
  • Cooked rice , to serve
Instructions:
  • In a large sauté pan, heat oil over medium heat. Sauté onions and bell pepper until soft, about 5 minutes. Stir in garlic and ginger and cook for 1 minute. Add curry powder and cumin, cook for a few more minutes, adding more oil if necessary to prevent sticking.
  • Combine the vinegar, coconut milk, and one chopped mango in the pan. Bring it to a boil, then simmer gently for 15 minutes, stirring occasionally.
  • Blend the sauce until smooth: Take the pan off the heat, transfer the sauce to a blender, and pulse until smooth before adding it back to the pan.
  • Add the chicken pieces and raisins to the pan, return to a low simmer, cover, and cook for 8 to 10 minutes until chicken is cooked through. Check doneness by cutting open the largest piece of chicken with a knife.
  • Add the rest of the chopped mango to the pan. If using, stir in the cream. Cook over very low heat for another minute or two uncovered. Be careful not to let it boil to prevent curdling of the cream.
  • Taste and adjust the flavors: If slightly sweet, mix in additional vinegar. If lacking sweetness, sprinkle in a bit of sugar. Season with salt and pepper to your liking. Serve over rice and top with cilantro, if preferred. Tell us what you think by leaving a rating and review!
