A versatile and irresistible Coronation chicken & potato salad: a must-make for lunches, midweek dinners, picnics, and delicious sandwiches. Sweet, spicy, rich, and light - guaranteed to impress and become a repeat favorite.
Ingredients:
  • 1 barbecued chicken
  • 6 chat potatoes, cooked, cut into bite-size pieces
  • 1 Lebanese cucumber, peeled, cut into bite-size pieces
  • 20.00 ml chopped chives, plus extra whole to garnish
  • 1 butter lettuce or green oak leaf lettuce, leaves separated (or 200g shredded iceberg lettuce)
  • 1 tsp nigella seeds or cumin seeds (see Notes)
  • 39.60 gm whole-egg mayonnaise
  • 95g yoghurt
  • 40.00 gm mango chutney
  • 10.00 gm mild curry powder
  • 5.60 gm tomato paste
  • Dash of Tabasco
  • 21.00 gm lemon juice, plus wedges to serve
Instructions:
  • In a bowl, combine all dressing ingredients and whisk until smooth. Season with sea salt and freshly ground pepper to taste. Gradually add 1-2 tablespoons of water, whisking until it reaches a light and creamy consistency. Set aside.
  • Remove the chicken from the bones and dice into bite-sized pieces. Combine the chicken, potato, cucumber, and chives with the dressing.
  • Assemble the lettuce and salad in individual bowls. Top with nigella seeds, extra chives, and serve with lemon wedges.
