Revive this timeless curried chicken dish in lettuce cups for a modern and delicious twist.
Ingredients:
  • 9.20 gm vegetable oil
  • 1 onion, finely chopped
  • 28.00 gm Mild Curry Paste
  • 5.60 gm tomato paste
  • 80ml red wine
  • 20.00 gm Mango & Ginger Chutney, plus extra to serve
  • 300g egg mayonnaise
  • 20.00 ml chopped fresh coriander, plus extra leaves to serve
  • 100ml thickened cream
  • 1kg cooked chicken meat, shredded
  • 1 butter lettuce
  • 40.00 ml toasted almonds, finely chopped
  • 100g pkt Mini Puppodums
Instructions:
  • In a saucepan over medium heat, sauté the onion in oil until soft. Stir in Sharwood's Mild Curry Paste and cook for 1 minute.
  • Combine tomato paste, wine, Sharwood's Mango & Ginger Chutney, lemon juice, and 1/4 cup (60ml) water in a pot. Cook and stir for 5 minutes. Let it cool. Blend in a food processor with mayonnaise, coriander, and cream until smooth.
  • In a bowl, mix the chicken with the sauce. Place lettuce leaves on plates and fill them with the chicken mixture. Top with extra coriander and nuts for a flavorful garnish.
  • Garnish with Sharwood's Mini Puppodums, additional Chutney, and a lemon wedge for added flavor, if desired.
