Our modern twist on Coronation chicken features wine-infused caramelized onions, bold tomato flavors, and a hint of spicy curry in a creamy mayo sauce with a touch of crème fraîche for balance and richness.
Ingredients:
  • 135g (3/4 cup) dried apricots
  • 125ml (1/2 cup) boiling water
  • 3 chicken breast fillets
  • 18.20 gm extra virgin olive oil
  • 1 small brown onion, finely chopped
  • 22.20 gm tomato paste
  • 5.00 gm mild curry powder
  • 60ml (1/4 cup) red wine
  • 21.00 gm fresh lemon juice
  • 125g (1/2 cup) mayonnaise
  • 90g (1/3 cup) crème fraîche
  • 2 baby cos lettuces, leaves separated, washed, dried
  • 35g (1/3 cup) toasted flaked almonds
Instructions:
  • Place 85g (1/2 cup) of apricots in a heatproof bowl and cover them with boiling water. Let them soak for 1 hour.
  • Place the chicken in a large frying pan, cover with water, and simmer on low heat for 15 minutes until cooked through. Transfer the chicken to a plate and chill in the fridge until completely cooled.
  • In a small saucepan over medium heat, warm the oil. Add the onion and cook, stirring, for 4-5 minutes until softened and translucent without browning. Stir in the tomato paste and curry powder, cooking for 30 seconds until fragrant. Pour in the wine and simmer, stirring occasionally, until the liquid reduces and the sauce thickens, about 3 minutes. Take off the heat and mix in the lemon juice. Transfer to a large bowl and let it cool completely.
  • In a small food processor, combine the soaked apricots and soaking water. Blend until smooth, scraping down the sides of the processor with a spatula as needed.
  • Combine the blended apricot, mayonnaise, and crème fraîche with the onion mixture, stirring until thoroughly mixed. Season generously.
  • Finely chop the remaining apricots and mix with the mayonnaise. Coarsely shred the chicken and add to the bowl. Toss until thoroughly coated.
  • Distribute the lettuce among serving bowls, then add the chicken mixture on top. Finish by sprinkling with almonds before serving.
