Coronation chicken: a royal favorite since 1953 coronation.
Ingredients:
  • 36.40 gm olive oil
  • 3cm piece fresh ginger, finely grated
  • 10.00 gm mild curry powder
  • 125.00 gm mango ginger chutney (see note)
  • 62.50 ml dried apricots, thinly sliced
  • 123.75 gm mayonnaise
  • 12.20 gm worcestershire sauce
  • 4 chicken breast fillets
  • 1 large mango, thinly sliced
  • 1 green oakleaf lettuce, leaves separated
  • 1 Lebanese cucumber, cut into ribbons
  • 82.50 ml fresh coriander, roughly chopped
  • 62.50 ml flaked almonds, toasted
Instructions:
  • In a small saucepan over medium heat, heat half of the oil. Add ginger and curry powder, stir for 1 minute until fragrant. Transfer to a large bowl and mix in chutney, apricots, mayonnaise, and sauce.
  • Halve each chicken fillet lengthwise to create two thinner fillets.
  • Preheat a barbecue hotplate or chargrill over medium-high heat. Brush chicken with oil and season with salt and pepper. Cook chicken in batches for 2 to 3 minutes on each side until golden brown and fully cooked. Let it rest on a chopping board before slicing into thick pieces.
  • Combine chicken and mango with the creamy mayonnaise mixture. Gently toss to mix. Place the flavorful chicken mixture over crisp lettuce and cucumber. Top with fresh coriander and crunchy almonds. Serve with zesty lime wedges.
