Chicken, cherry and almond salad

Elevate UK classic coronation chicken with a refreshing salad twist.
Ingredients:
  • 200g sour cream
  • 7.20 gm honey
  • 28.00 gm mild curry paste (such as korma)
  • Juice of 1/2 lemon
  • 1 large barbecue chicken, meat shredded (or 2 x 450g packets smoked chicken breast fillets, shredded)
  • 150g watercress sprigs
  • 250.00 ml mint leaves
  • 350g cherries, pitted
  • 6 spring onions, shredded
  • 160g almond
Instructions:
  • Mix together the sour cream, honey, curry paste, and lemon juice in a bowl, season to taste. Thin out the dressing with 2-3 tablespoons of water if needed.
  • Combine the chicken, watercress, mint, cherries, spring onion, and almonds in a bowl. Divide the mixture among plates and generously drizzle with the dressing.
