Ingredients:
  • Olive oil spray
  • 2 corn-fed chicken breast fillets
  • 1 large mango, cheeks removed, peeled, thinly sliced
  • 2 celery sticks, trimmed, thinly sliced
  • 1 shallot, trimmed, thinly sliced lengthways
  • 40.00 ml fresh lemon thyme leaves
  • 1 garlic clove, crushed
  • 18.20 gm olive oil
  • 125g (1/2 cup) whole-egg mayonnaise
  • 37.60 gm sour cream
  • 2.50 gm Keen’s Traditional Curry Powder
  • 1.25 gm ground cinnamon
  • 21.00 gm fresh lemon juice
  • 20.00 gm mango chutney
  • 1 small sourdough loaf, cut diagonally into 16 slices
Instructions:
  • Preheat a non-stick pan over medium heat and lightly spray with oil. Season chicken with salt and pepper, then cook each side for 3-4 minutes until golden and fully cooked. Transfer to a plate, let it cool, and slice thin diagonally.
  • In a large bowl, toss together the mango, celery, shallot, lemon thyme, garlic, and oil.
  • In a bowl, mix together mayonnaise, sour cream, curry powder, cinnamon, lemon juice, and chutney.
  • Preheat the grill to medium-high heat. Grill the bread for 1-2 minutes on each side until it turns a delicious light golden brown.
  • Combine the chicken with half of the dressing in the vibrant mango mixture. Season generously with salt and pepper, then gently toss until everything is well combined.
  • Place the bread on individual serving plates, spoon the chicken mixture on top, and finish by drizzling the remaining dressing over the dish.
