Quick and flavorful mango chicken pairs perfectly with crispy pappadums.
Ingredients:
  • 16 small pappadums
  • 36.40 gm peanut oil
  • 800g chicken thigh fillets, trimmed, cut into 1-2cm-thick slices
  • 3 green shallots, thinly sliced
  • 5.00 gm Madras curry powder
  • 120g (1/3 cup) mango chutney
  • 82.50 ml roughly chopped fresh coriander
  • 1 small Iceberg lettuce, leaves washed
Instructions:
  • Prepare pappadums following the instructions on the packet.
  • Heat peanut oil in a large non-stick frying pan over medium-high heat. Add chicken and cook until sealed, about 3-4 minutes, stirring often. Mix in green shallots and curry powder, stirring occasionally, until chicken turns golden, about 2-3 minutes. Add mango chutney and cook until sauce bubbles, stirring constantly for 1-2 minutes. Stir in coriander. Serve with pappadums and lettuce leaves.
