Oven-baked prawn pilaf

Upgrade your dinner routine with this easy and flavorful baked spicy prawn pilaf.
Ingredients:
  • 2 cinnamon quills
  • 80.00 ml ghee (see note)
  • 1 large onion, finely chopped
  • 1 garlic clove, chopped
  • 1 tsp ground coriander
  • 2.50 gm ground cumin
  • 3.75 gm mild curry powder
  • 10 cardamom pods, bruised
  • 10 fresh curry leaves (see note)
  • 200g basmati rice
  • 500ml chicken stock
  • 20 green prawns, peeled (tails intact)
  • 120g pea
  • Mango chutney, to serve
Instructions:
  • Preheat your oven to 200°C.
  • In a flameproof casserole, warm the ghee over medium heat. Sauté the onion, garlic, spices, and curry leaves for 1 minute until fragrant. Add the rice, mix well to coat, season with salt and pepper. Pour in hot stock, stir, cover, and bake for 15 minutes until the rice is tender and most of the liquid is absorbed.
  • Take the pan out of the oven, place prawns on top of rice, cover, and bake for an additional 10 minutes until prawns are fully cooked. Add peas, cover, and let sit for 5 minutes until peas are heated through. Serve the pilaf with mango chutney.
