Whip up a delicious one-tray prawn rigatoni for the family in no time.
Ingredients:
  • 400g rigatoni pasta
  • 500ml fish stock
  • 2 garlic cloves, chopped
  • 20.00 ml chopped oregano leaves
  • 16 large green prawns, peeled (tails intact), deveined
  • Zest and juice of 1 lemon
  • 120g pea
  • 125g soft goat's cheese
  • 1/2 bunch chives, snipped
Instructions:
  • Preheat your oven to 200 degrees Celsius.
  • Combine pasta, fish stock, garlic, oregano, and 2 cups (500ml) hot water in a 3L (12-cup-capacity) casserole dish. Bake covered for 20 minutes, then add prawns, lemon juice, and peas. Cover and cook for an additional 15 minutes until pasta is al dente and prawns are cooked through. Season to taste.
  • To serve, generously drizzle with oil and sprinkle goat's cheese, chives, and lemon zest on top.
