Elevate your summer party with oven-baked wings finished on the BBQ for the perfect crispiness. Great as a starter too!
Ingredients:
  • 2 large bunches of fresh oregano
  • 5 cloves of garlic
  • 3 fresh green chillies
  • 2 lemons
  • extra virgin olive oil
  • 8 free-range chicken wings
  • 8 large raw shell-on king prawns from sustainable sources
  • 1 yellow courgette
  • 1 green courgette
Instructions:
  • - Prepare the oregano paste by pounding oregano, garlic, chilies, and lemon zest with sea salt in a pestle and mortar. - Make the lemon dressing by mixing lemon juice, oil, salt, and black pepper in a bowl and refrigerate. - Marinate chicken wings and prawns with half of the oregano paste overnight. - Soak wooden skewers in water. - Thread chicken wings onto skewers and bake at 160ºC/325ºF/gas 3 for 1 hour. - Thread prawns onto skewers and refrigerate. - Thread courgettes onto skewers, drizzle with oil, and season with salt and pepper. - Grill skewers until golden on each side. - Serve skewers with lemon dressing and garnish with reserved oregano leaves. Serve with lemon wedges.
