Indian Spiced Chicken and Chutney

Spice up dinner with tangy yogurt-marinated chicken, topped with mango chutney and served with fragrant rice.
Ingredients:
  • 1/2 cup plain yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons grated gingerroot
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1/8 teaspoon ground cloves
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1/2 cup purchased mango chutney
  • Hot cooked basmati rice or regular long-grain white rice, if desired
Instructions:
  • Combine all marinade ingredients in a small bowl, then pour the mixture over the chicken in a resealable plastic bag or container. Ensure the chicken is well coated, seal the bag or cover the container, and refrigerate for 1 hour.
  • Cook the chicken in a 12-inch skillet with the marinade over medium-high heat for 15 to 20 minutes, flipping once, until the chicken's thickest part shows clear juice and reaches 165°F. Top with chutney and serve with rice.
