Indian-spiced chicken and mango salad

Indian-inspired Chicken and Mango Salad ready in just 10 minutes!
Ingredients:
  • 18.40 gm vegetable oil
  • 375g packet lemon and garlic chicken kebabs
  • 1 tsp garam masala
  • 125.00 ml plain Greek-style yoghurt
  • 40.00 gm mango chutney
  • 1 small red onion
  • 1 Lebanese cucumber
  • 1 mango
  • 82.50 ml fresh mint leaves, plus extra to serve
  • 82.50 ml fresh coriander leaves
  • 60g mixed salad leaves
  • 75g bag mini pappadums
  • 62.50 ml roasted cashews
  • 1 lime, cut into wedges
Instructions:
  • In a large frying pan over medium-high heat, warm oil. Remove chicken from skewers, sprinkle with garam masala, and add to the pan. Cook for 5 to 6 minutes, stirring occasionally, until browned and fully cooked.
  • In a small bowl, mix together yogurt and mango chutney. Season with salt and pepper, then set aside.
  • Slice red onion thinly and place in a large bowl. Thinly slice cucumber and add to the bowl. Peel mango, remove cheeks, and slice thinly before adding to the bowl. Toss in mint, coriander, salad leaves, and pappadums; gently mix to combine.
  • Plate the salad, layer with chicken, spoon over the yoghurt mixture, sprinkle with chopped cashews, garnish with mint leaves, and serve with lime wedges.
