Elevate your meal with a flavorful Indian-style chicken and quinoa dish.
Ingredients:
  • 36.40 gm peanut oil
  • 20.00 ml black mustard seeds
  • 12 fresh curry leaves*, plus extra to garnish
  • 2 tsp garam masala*
  • 3 long green chillies, seeds removed, thinly sliced
  • 1 large onion, coarsely grated
  • 200g quinoa
  • 110g split peas
  • 750ml chicken stock
  • 375.00 ml shredded cooked chicken
  • 80g baby spinach leaves, roughly shredded
Instructions:
  • In a large pan over medium heat, heat oil. Add mustard seeds and cook until they pop. Stir in curry leaves, garam masala, chili, and onion until onion is golden and spices are aromatic. Mix in quinoa and peas to coat in spices. Pour in stock and 1 cup (250ml) boiling water. Simmer over low heat for 25 minutes. Add chicken and spinach, heat through for 5 minutes. Season to taste and serve garnished with extra curry leaves.
