Flavorful quinoa infused with Mediterranean and Indian spices for a delicious side dish.
Ingredients:
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1.5 cups chicken stock
  • 0.75 cup quinoa
  • 1.5 teaspoons curry powder
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon cumin
  • 0.25 teaspoon cinnamon
  • 1 (14 ounce) can garbanzo beans, drained and rinsed
  • 0.5 cup toasted pine nuts
  • 0.5 cup raisins, soaked in hot water and drained
Instructions:
  • In a saucepan, heat olive oil over medium heat. Sauté onion and garlic until soft and translucent, for about 5 minutes. Add stock, quinoa, curry powder, salt, pepper, cumin, and cinnamon; bring to a boil. Lower the heat to medium-low, cover, and simmer until quinoa is tender, around 20 minutes.
  • Combine the beans, pine nuts, and raisins with the cooked quinoa. Enjoy it warm or chilled.
