Golden turmeric-infused vegetarian quinoa recipe.
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 2 tsp finely grated fresh ginger
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 150g (1 cup) quinoa, rinsed, drained
  • 500ml (2 cups) water
  • 300g broccoli, cut into small florets
  • 2 large corncobs, husks removed
  • Olive oil spray
  • 40.00 ml chopped fresh coriander
  • Low-fat natural yoghurt, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • In a large saucepan over medium heat, warm oil. Sauté onion until soft, about 5 minutes. Add garlic, ginger, and spices, cook for 1 minute while stirring. Mix in quinoa, pour in water, and bring to a boil. Reduce heat, cover, and simmer for 10 minutes. Add broccoli on top, cover, and simmer for an additional 3-4 minutes.
  • Preheat a chargrill on high while lightly spraying corn with oil. Grill for 15-20 minutes, turning occasionally, until lightly charred. Set aside to cool, then cut the kernels off the corncobs.
  • Stir in corn and chopped coriander. Drizzle with yogurt and garnish with fresh coriander. Season with pepper to taste.
