Creamy curried chicken and mango pasta salad - a quick and delicious midweek meal option.
Ingredients:
  • 250g dried large spiral pasta
  • 123.75 gm whole-egg mayonnaise
  • 2.50 gm mild curry powder
  • 20.00 ml apple cider vinegar
  • 500.00 ml shredded cooked chicken
  • 1 large celery stalk, thinly sliced
  • 1 Lebanese cucumber, halved lengthways, thinly sliced
  • 1 large mango, cut into 2cm cubes
  • 62.50 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • Prepare the pasta according to package instructions until tender. Then, rinse under cold water and transfer to a large bowl.
  • In a bowl, combine mayonnaise, curry powder, and vinegar and mix well.
  • Combine chicken, celery, cucumber, and 2/3 of the mango with pasta. Drizzle with dressing. Season with salt and pepper, then toss everything together. Serve in bowls and garnish with parsley and the rest of the mango.
