Tender chicken with mango rice, a quick and delicious one-pot meal ready in 45 minutes.
Ingredients:
  • 1 teaspoon curry powder, or to taste
  • 0.25 teaspoon black pepper
  • 4 skinless, boneless chicken breast halves
  • 1 cup chicken broth
  • 0.5 cup water
  • 0.5 cup white wine
  • 1 cup long-grain white rice
  • 1 tablespoon dried parsley
  • 1 cup diced mango
Instructions:
  • Mix together the curry powder, 1/4 teaspoon of salt, and pepper. Massage the spice blend onto the chicken breasts and leave them aside.
  • Combine chicken broth, water, and wine in a large non-stick skillet. Add rice, brown sugar, dried parsley, and 1/4 teaspoon salt. Stir in mango. Place chicken on top of rice, bring to a boil, then cover and simmer on low for 20-25 minutes. Remove from heat.
  • Cover and let it sit until all the liquid is absorbed, approximately 5 minutes.
