Simmer mango, tofu (or chicken/shrimp) in flavorful curry coconut milk for a delicious meal.
Ingredients:
  • 1 tablespoon sesame oil
  • 5 cloves garlic, minced
  • 1 tablespoon minced ginger
  • 1 firm mango, peeled and sliced
  • 3 tablespoons yellow curry powder
  • 2 tablespoons chopped cilantro
  • 1 (14 ounce) can light coconut milk
  • 1 (14 ounce) package extra firm tofu, cubed
  • 0.25 teaspoon salt and pepper to taste
Instructions:
  • In a large pan, warm the aromatic sesame oil over medium-high heat. Sauté the garlic and ginger until golden and aromatic, about 1 to 2 minutes. Add the mango and cook briefly to soften. Mix in the fragrant curry powder and fresh cilantro, allowing the flavors to meld for another minute.
  • Simmer the coconut milk then add tofu, season with salt and pepper, and reduce the liquid by half, stirring occasionally for about 5 minutes.
