Tangy lime chicken curry with red pepper chutney.
Ingredients:
  • 2.5 pounds cut up chicken pieces
  • 3 tablespoons olive oil
  • 3 tablespoons curry powder
  • 1 (12 ounce) jar chutney
  • 1 red bell pepper, thinly sliced
  • 1 lime, cut into wedges
  • 0.125 cup chopped green onion for topping
  • 0.25 cup chopped peanuts
Instructions:
  • 1. Start by washing the chicken and gently drying it. 2. Heat the oil in a large skillet until it's almost sizzling. 3. Carefully place the chicken in the skillet, skin side down, and sear until lightly golden on both sides. 4. Sprinkle in the curry powder, add the chutney and diced red bell pepper. 5. Let it simmer on low to medium heat for 30 minutes. 6. Finish by garnishing the chicken with lime wedges, chopped scallions, and a sprinkle of peanuts. 7. Serve while still warm and enjoy!
