Try this vibrant and nutritious Asian chicken noodle salad for a delightful meal.
Ingredients:
  • 270g dried somen noodles (see note)
  • 500.00 ml shredded cooked skinless chicken
  • 1 medium yellow capsicum, thinly sliced
  • 200g enoki mushrooms, trimmed, separated
  • 1 long red chilli, deseeded, thinly sliced
  • 1 small red onion, halved, thinly sliced
  • 82.50 ml fresh coriander leaves
  • 165.00 ml fresh Thai basil leaves
  • 27.60 gm vegetable oil
  • 2 tsp sesame oil
  • 62.50 ml rice vinegar
  • 4cm piece fresh ginger, peeled, grated
Instructions:
  • Boil noodles in a large pot of salted water following package instructions until tender. Drain and rinse with cold water. Combine with chicken, bell pepper, mushrooms, and chili in an airtight container. Store onions in one bag, coriander in another, and basil in a third bag, refrigerate everything.
  • Prepare the dressing by combining oils, vinegar, and ginger in a screw-top jar. Season with salt and pepper, then securely close the lid and chill in the refrigerator.
