Family-friendly Asian chicken noodle salad bursting with crisp veggies.
Ingredients:
  • 450g packet fresh thin hokkien noodles
  • 2 x 200g packets beetroot slaw
  • 500.00 ml shredded cooked chicken
  • 2 green onions, thinly sliced
  • 40.00 ml finely chopped fresh coriander leaves
  • 40.00 ml roughly chopped salted, roasted macadamia nuts
  • 132.50 gm Japanese roasted sesame dressing
  • Coriander sprigs, to serve
Instructions:
  • Prepare the Hokkien noodles according to the package instructions. Once cooked, rinse with cold water and drain well.
  • Combine hokkien noodles with vibrant beetroot slaw, succulent chicken, fragrant onion, and freshly chopped coriander in a large bowl. Mix well to evenly distribute all the flavors.
  • Portion the vibrant rainbow noodle salad into 4 lunchboxes. Sprinkle with chopped nuts and fresh coriander leaves. Distribute the flavorful dressing into 4 small containers. Chill in the refrigerator until ready to enjoy.
