Elevate your Christmas feast with this crispy Asian noodle salad.
Ingredients:
  • 2 small carrots, peeled
  • 2 Lebanese cucumbers
  • 625.00 ml shredded red cabbage
  • 2 green onions, thinly sliced
  • 80g baby Asian salad leaves
  • 50g fried noodles (see note)
  • 36.80 gm rice bran oil
  • 44.00 gm sweet chilli sauce
  • 42.00 gm lime juice
  • 2cm piece fresh ginger, finely grated
Instructions:
  • Peel carrots and cucumbers into thin ribbons using a vegetable peeler. Transfer to a large bowl along with cabbage, onion, salad leaves, and noodles. Mix everything together.
  • Combine rice bran oil, sweet chilli sauce, lime juice, and grated ginger in a small bowl. Pour over the carrot mixture and gently toss to combine. Serve and enjoy!
