Vibrant veggie salad bowl – perfect for a healthy meal any day!
Ingredients:
  • 75g (1 ⁄2 cup) podded frozen edamame, thawed
  • 1 large carrot, peeled, shredded
  • 75g tomato medley mix, halved
  • 2 radishes, thinly sliced
  • 30g mixed salad leaves
  • 60g cooked skinless chicken, shredded
  • 2 tsp almond spread
  • 5.30 gm salt-reduced gluten-free soy sauce
Instructions:
  • Place the edamame in a large heatproof bowl, pour enough boiling water to cover, and let sit for 2 minutes. Drain and transfer to a serving bowl.
  • Combine the carrots, tomatoes, radishes, salad leaves, and chicken in a bowl.
  • In a small bowl, combine the almond spread and soy sauce. Add 1 tsp warm water and whisk with a fork until smooth. Drizzle over salad.
