Ingredients:
  • 75g (1/2 cup) plain flour
  • 2 eggs, lightly beaten
  • 1 tsp sesame oil
  • 100g (2 cups) Panko Breadcrumbs
  • 24 large green king prawns, peeled, deveined, tails intact
  • Vegetable oil, for shallow-frying
  • Obento Tonkatsu Sauce, to serve
Instructions:
  • Put flour in a small bowl and season it. Mix eggs and sesame oil in a separate bowl. Put breadcrumbs in another bowl.
  • Take each prawn individually and coat it in flour, making sure to shake off any extra flour. Next, dip the prawn in egg and then coat it with breadcrumbs thoroughly. Place the coated prawn on a plate.
  • Heat vegetable oil in a deep frying pan until it reaches 1cm up the side of the pan. Shallow-fry prawns in batches for 3-4 minutes on each side until they are golden and cooked through. Drain on paper towel.
  • Garnish with tonkatsu sauce and fresh lemon wedges before serving promptly.
