Unveil flavorful fish and veggies hidden in parcels.
Ingredients:
  • 1/2 small wombok (see note), finely shredded
  • 130g bean sprout
  • 4cm piece ginger, peeled, cut into matchsticks
  • 6 green onions, ends trimmed, thinly sliced diagonally
  • 1 long fresh red chilli, seeded, thinly sliced lengthways
  • 250.00 ml coriander leaves
  • 4 (about 200g each) salmon fillets
  • 42.00 gm light soy sauce
  • 21.00 gm lime juice
  • 2 tsp sesame oil
  • Steamed jasmine rice, to serve
Instructions:
  • Preheat the oven to 200°C. Cut four 40cm squares of baking paper and lay them out on a clean work surface. Mix wombok and half the bean sprouts, ginger, green onion, chili, and coriander in a small bowl. Distribute the mixture evenly among the baking paper squares and place a salmon fillet on top. Fold and crimp the paper to form a bowl shape around each fillet. Drizzle with soy sauce, lime juice, and sesame oil. Transfer to a baking tray and bake for 10 minutes until the salmon is cooked to your desired doneness. Remove from the oven and serve.
  • Heat peanut oil in a small saucepan over high heat until smoking. Drizzle hot oil over salmon fillets. Serve on plates with bean sprouts, ginger, green onion, chili, and coriander. Enjoy with steamed rice, if desired.
