Healthy Asian-style snapper tray bake with capsicum, lime bursts.
Ingredients:
  • 4 Snapper Portions
  • 1 red capsicum, seeded, thinly sliced
  • 60ml soy sauce
  • 20.00 gm mirin seasoning
  • 2 tsp finely grated ginger
  • 1 garlic clove, crushed
  • 1 tsp sesame oil
  • 1 bunch choy sum, halved
  • 2 spring onions, thinly sliced diagonally
  • 125.00 ml coriander sprigs
  • Lime cheeks, to serve
Instructions:
  • Preheat your oven to 200˚C and prepare a large deep baking tray by lining it with baking paper.
  • Lay the capsicum evenly on the prepared tray and place the snapper on top.
  • In a small bowl, mix together soy sauce, mirin, ginger, garlic, and sesame oil. Pour the mixture over the snapper in the baking tray. Bake for 12 minutes until the snapper is almost cooked. Then add the choy sum to the tray and bake for an additional 3 minutes until the choy sum wilts and the snapper is cooked through.
  • Garnish snapper with fresh spring onion and fragrant coriander. Accompany with lime wedges for a burst of citrus flavor.
