Kumara jackets with chilli butter

Try delectable Asian-style-topped baked sweet potatoes for a satisfying lunch.
Ingredients:
  • 4 small kumaras
  • 125g unsalted butter, softened
  • 44.00 gm sweet chilli sauce
  • 60.00 ml chopped fresh coriander leaves
  • 60.00 ml fried Asian shallots*
  • 60.00 ml roasted peanuts, chopped
Instructions:
  • Preheat your oven to 200°C.
  • Wash and dry the kumaras. Coat the skin with oil, then roast on a baking tray for 45 minutes or until they're slightly soft when pressed.
  • Combine butter, chili sauce, and 2 tablespoons of coriander in a food processor to make a log shape. Wrap in plastic wrap and freeze for 30 minutes.
  • Mix together the remaining coriander leaves, fried shallots, and peanuts in a separate bowl. Keep it aside.
  • Let the kumara cool, then slice a cross on top and gently push open. Top with a slice of chili butter and a sprinkle of the fried shallot mixture before serving.
